Ageing in wood


to develop the wine over time

 

We use 225 litre, 500 litre and 30 hectolitre oak barrels for aging for a period of time ranging from 16 to 18 months depending on the vintage. The wood is only a tool to develop the wine over time , not a means to add wood tannins. We want the fruit to hold sway over the wood. Our aim with Veneroso, Nambrot and Mimesi Sangiovese is to produce wines that can last but with the right balance between fruit and acidity.

A few years ago, given the high proportion of the sangiovese variety in Veneroso, we decided to use 500 litre casks to age it instead of the more usual barriques, with very little use of new wood. For Nambrot on the other hand, we still use small barrels although we have reduced use of new wood to 30%.
