With the main dishes of the holidays you need a red like Mimesi Sangiovese Terre di Pisa DOC, Tenuta di Ghizzano. It is produced exclusively with pure Sangiovese grapes from organic farming.
The bunches are selected first during the harvesting phase, then on the sorting table before destemming, finally the grapes are further checked on a special table. The pressing does not take place with machinery, but with the feet and the pressed ferments in concrete tanks.
The wine obtained is matured for 15 months in Drunk Turtle cocciopesto amphorae, a material that refines the wine without however releasing wood substances such as tannins. The wine remains in the bottle for 10 months before being released. It has a ruby red color with garnet shades. It releases fruity aromas, summer fruit such as plum, blackberry, but also citrus notes, as well as floral hints of violet, liquorice and balsamic. In the mouth it is full, broad, round, fresh, with well-woven tannins. It is the red wine that cannot be missing to accompany more structured dishes in general, the large second courses of parties usually based on meat, be they stuffed capon or roasts in general. If it doesn't come into play on Christmas Eve and for all the important holiday lunches and dinners it also shows off with mature, but not spicy, cheeses.
